SWEET POTATO COCONUT SOUP

Ready to nourish both your tastebuds and soul? Let’s go👩🏼‍🍳

INGREDIENTS
•1 tbsp 🥥 oil
•4 c sweet potato
•1 yellow 🧅
•3 cloves garlic
•1 bay leaf
•6 cardamomo
•2 cloves
•¼ tsp each: cinnamon, nutmeg, turmeric
•2 tsp kosher salt
•1 ½ c 🥥 milk 
•2 tbsp agave
•1 tsp 🍋 juice
•1 c 💧
•2 tbsp ghee 🧈

FOR SERVING
•Fresh sage
•Toasted almonds
•🌶 flakes
•Bread
•Plain or coconut yogurt

INSTRUCTIONS
1. Heat oil in a Staub Cast Iron or large pot over medium heat.
2. Add sweet potatoes & cook for 3-5 min., until golden brown. Add onion and 🧄, sauté for 3 min., stirring frequently.
3. Season with spices, stir & cook for 1 min., then add coconut milk & agave. Bring to simmer, cover, & reduce heat to low. Cook for 7-10 min. or until almost mashed puree consistency is approached, stirring occasionally. 
4. Uncover, let cool slightly, & transfer to a blender, add water and purée on high, until creamy & smooth. Taste & adjust seasonings. Return back to pot & keep warm over low heat, cover.
5. Serve with your toppings & bread. 

TATI TIPS 
•Yields 6 servings.
•It’s great as it is, or goes deliciously with 🥗, pasta, rice, bowls,or as a combo with a 🥪.
•Store in the refrigerator for up to 5 days or freeze for up to 2 months.

This soup keeps well, so it can be prepared in advance and heated just a few minutes before serving, that way you have more time to mingle & enjoy the dinner. This year's gathering will surely be unforgettable✨
