SWEET POTATO COCONUT SOUP

INGREDIENTS
ā¢1 tbsp š„„ oil
ā¢4 c sweet potato
ā¢1 yellow š§
ā¢3 cloves garlic
ā¢1 bay leaf
ā¢6 cardamomo
ā¢2 cloves
ā¢Ā¼ tsp each: cinnamon, nutmeg, turmeric
ā¢2 tsp kosher salt
ā¢1 ½ c š„„ milkĀ
ā¢2 tbsp agave
ā¢1 tsp š juice
ā¢1 c š§
ā¢2 tbsp ghee š§
FOR SERVING
ā¢Fresh sage
ā¢Toasted almonds
ā¢š¶ flakes
ā¢Bread
ā¢Plain or coconut yogurt
INSTRUCTIONS
1. Heat oil in a Staub Cast IronĀ or large pot over medium heat.
2. Add sweet potatoes & cook for 3-5 min., until golden brown. Add onion and š§, sautĆ© for 3 min., stirring frequently.
3. Season with spices, stir & cook for 1 min., then add coconut milk & agave. Bring to simmer, cover, & reduce heat to low. Cook for 7-10 min. or until almost mashed puree consistency is approached, stirring occasionally.Ā
4. Uncover, let cool slightly, & transfer to a blender, add water and purƩe on high, until creamy & smooth. Taste & adjust seasonings. Return back to pot & keep warm over low heat, cover.
5. Serve with your toppings & bread.Ā

ā¢Yields 6 servings.

ā¢Store in the refrigerator for up to 5 days or freeze for up to 2 months.
